This month’s The Food Exchange theme was summer tarts. I struggled slightly to think of a bake for Greta as all of the summer tarts I could think of weren’t english! Some of my favourite summer desserts are tart au citron and tarte aux framboises! My final decision was something I haven’t actually made before but I thought looked really pretty! Greta’s challenge for me this month was Rhabarber- Baiser, which is a rhubarb meringue cake. Time for a little confession… I have never eaten rhubarb before. So I was quite excited to try this recipe and rhubarb for the first time. This is the first time I have used a German recipe without translating any of it, so was a bit concerned at points that I had done a few things wrong! I thought there was far too much rhubarb for the cake mixture… it just turns out it is a really big cake!
I really enjoyed photographing the rhubarb at different stages and the beautiful range of colours it has!
I ended up baking the cake for a lot longer than the recipe suggest but the end result was brilliant!
It was a really soft sponge and the tartness of the rhubarb was balanced out really well by the sweetness of the meringue! Tim really doesn’t like rhubarb at all, so I kept a few pieces at home for me and the rest he took to work for his colleagues… I hope my version lives up to the ones that can bought in the bakery!
