Brownies seem to be one of the things that my friends and family enjoy the most when I make them. I have quite a few ideas for flavour combinations but it is just trying to find time to test them all!
I made these brownies with meringue last week. Tim took them in to work and they seemed to go down very well! (I did mange to pinch a small piece to try before they disappeared!)
I think the soft chocolatey brownie goes really well with the crunchy meringue on top! They are very sweet, so when you are cutting them make sure they are fairly small squares.
While making these I decided to have a go at filming the process using time lapse. It is something Tim has been trying to persuade me to do for a while and I was really pleased with the result for my first go. Brownies topped with Meringue
Ingredients
300g Dark chocolate
220g Butter, softened
3 Eggs
225g Brown sugar
80g Plain flour
1/2 tsp Baking powder
100g Milk chocolate, chopped in to small pieces
120g (approx. 4 eggs) Egg Whites
240g White sugar
Cocoa powder and chocolate shavings to decorate
Method
Preheat the oven to 180c (fan assisted)
Melt the dark chocolate and butter together in a bowl over a pan of hot water
Beat the eggs and sugar together until pale and fluffy
Mix the slightly cooled melted chocolate mixture in to the egg mixture
Stir in the flour, baking powder, milk chocolate and a pinch of salt until well combined
Pour in to a lined baking tin and level the surface
Bake in the preheated oven for 30 minutes
Meanwhile, whisk the eggs to soft peaks
Then slowly add the white sugar while whisking
Stop whisking when the meringue mix is smooth and glossy
Top the brownie with the meringue mix and create a few peaks
Bake in the oven for 20 minutes or until the meringue has formed a crust (your meringue will colour but don’t worry as you can decorate it later)
Allow the brownies to cool then decorate with cocoa powder and chocolate shavings before cutting in to squares
