A recipe for Vanilla Cheesecake

 Now I have a little more time on my hands I have been coming up with a lot of recipes. I have been meaning to make a cheesecake recipe for a while and I thought a simple vanilla cheesecake would be a great place to start!

This simple cheesecake is great served with fresh fruit or berries or even chocolate sauce!

Now that I have this recipe you can expect to see some more cheesecake recipes coming soon!

Vanilla Cheesecake

Ingredients

Base

80g butter, melted

200g biscuits (I use digestives), blitzed in to crumbs

Filling

3 packs of cream cheese (525g)

200ml double cream

80g icing sugar

1 1/2 tsp vanilla extract

Juice of 1 lemon

Method

Mix the melted butter and biscuit crumbs together until well combined.

Line a 20cm spring form cake tin and grease the sides with a little bit of butter.

Spoon the mixture in to the tin and using the back of a spoon press evenly across the bottom of the tin.

Put in the fridge to chill while you make the filling.

To make the filling, beat the cream cheese, icing sugar, vanilla extract and lemon juice together until smooth.

whisk the double cream until it holds itself.

Fold the cream in to the cream cheese mix.

Put in to the tin on top of the biscuit base, level and smooth the mixture.

Chill in the fridge for at least 4 hours.
