A few days later than planned but here is my recipe for Christmas cookies! If you want to make something just before Christmas I would definitely recommend these!
Ingredients
140g butter
180g brown sugar
1 egg
1 tsp vanilla extract
150g dark chocolate
150g raisins (soaked in 35g brandy overnight)
1/2 tsp salt
230g plain flour
1/2 tsp bicarbonate of soda
zest of 1/2 an orange
1 1/2 tsp ground ginger
1 1/2 tsp ground cinnamon
Method
1.Beat the sugar and butter together until light and fluffy.
2.Add the egg and beat until combined, then add the vanilla extract.
3.Once everything is combined add the chocolate, raisins, orange zest and mix again.
4.Finally gently fold in the flour, salt, spices and bicarbonate of soda.
5.Put the mixture on a large piece of clingfilm and roll in to a log, make sure you twist the ends so cookie dough doesn’t spill out, also push the ends of the log so they are flat and place in the freezer.
6.After a couple of hours you can cut the log in to portions and place the discs on a sheet of greaseproof paper on a baking tray and bake in the oven at 175c (fan assisted) for around 10 minutes. You want the edges to be set and slightly crunchy but the middle to be quite soft.
I like to cut a couple of discs off and bake them and leave the rest in the freezer, that way freshly baked cookies are only ever 15 minutes away!
