In my last post I mentioned I would be making an icecream sandwich this week and here is the result! I have never had an icecream sandwich before but this was delicious! If you would like the recipe have a look at the bottom of this post.
I cycle through strawberry fields every day to get to and from school. At the moment with the weather being so warm and the strawberries being picked, the air is heavy with the scent of strawbwerries… which is making me crave them on a daily basis!
It is 3 weeks tomorrow until my language exam and rather than getting more confident I am getting more nervous. I don’t deal well with exams so I knew I was going to be nervous. I am just hoping I can get through the 4 hours and get my qualification!

Icecream Sandwich
Follow my recipe for cookies here. In this recipe I use 100g milk chocolate, 100g dark chocolate and 100g raisins, you can use other things instead such as nuts. You need two cookies per sandwich so cut as many slices from your frozen cookie log as you need. Bake the cookies as stated in the recipe and then allow to cool almost completely.
Additional ingredients
good quality vanilla icecream
toppings such as chocolate chips, nuts or fruit
… Assembling the sandwich…
turn one cookie upside down and put a small scoop of icecream in the middle. You don’t want it to be too big otherwise you will struggle to eat it!
Sprinkle with the toppings of your choice.
Put another cookie on top, press down lightly and enjoy!
