Fluffy banana bread pancakes (sugar free)

This year it is just me and Noah for pancake day. As much as I love pancakes covered in chocolate sauce I haven’t yet introduced them to Noah. So I made his favourite pancakes for the both of us instead.

These pancakes are sugar free so perfect for small children. I have added cinnamon to mine to give them a bit more flavour.

Serve them with whatever takes your fancy… fresh fruit, yoghurt, nut butter… or chocolate sauce 😉

Noah’s toppings of choice are sliced banana, Greek yoghurt and peanut butter qT mood

A recipe for banana bread pancakes

Ingredients
1 banana
1 tsp baking powder
1 tsp ground cinnamon
1 egg
150g plain flour
140g milk
Method
Start by mashing the banana until smooth
Add into a bowl with all of the dry ingredients and mix until combined
Add all of the wet ingredients and combine
Place a splash of oil in a frying pan and put on a medium-high heat
Using an ice cream scoop or large spoon, dollop the batter into the pan and allow to cook for a few minutes on either side until golden brown
Serve while warm with your toppings of choice
Enjoy!
Note- you can add some chocolate chips into the batter at the end
