Tuesday 23rd June (Healthy Chocolate Mousse)

Sorry I have been quite lately! I have been busy preparing for my exam next week, we also had a friend over for the day on Saturday which was really nice!

As I mentioned in my last post, last week I had a week with reduced sugar. As you know I love sweet food, but I feel it is important to take a break from it sometimes. One night after dinner we were sat on the sofa, Tim started munching his way through a Magnum and I got a little bit of food envy! So I decided to make a healthy chocolate mousse. I will put what I did below, it has no refined sugar in it. This isn’t something I would normally eat, but for this week I found it satisfying!

Yesterday I made a trial run of my sisters birthday cake. I was really pleased with the cake itself! However I made white chocolate ganache for the filling which was a disaster! It just didn’t set properly, even after 20 hours in the fridge! So I need suggestions for another filling!

Finally, Greta from Greta Bakes and I have decided to do a series of blog posts together. As you know I moved to Germany 10 months ago, Greta has recently moved from Germany to England. I will go in to more detail on my first blog post in the series. I just wanted to mention it as I am really excited about this series!

Healthy Chocolate Mousse

per person; 1 ripe banana, 1 tbsp cocoa powder (no added sugar), a pinch of salt

Put all of your ingredients in a blender and mix until smooth. Taste the mixture, at this point you can adjust it by adding more salt, more cocoa powder or a little honey to sweeten it. Chill for around 15 minutes and then eat 🙂
